- 400 g Sweet potato
- 60 g Fresh spinach
- 200 g Feta cheese
- 100 g Sun-dried tomatoes in olive oil
- 250 g Eggs
- 340 g Greek yogurt
- 15 g Olive oil
- 10 g Spices (salt, pepper, nutmeg, oregano)
Preparation
- Peel the sweet potato and cut it into thin, long slices. Arrange them in the bottom of an ovenproof dish and drizzle with olive oil.
- Arrange the fresh spinach and the sun-dried tomatoes, cut into strips, on top of the layer of sweet potatoes.
- Crack the eggs into a bowl, add the Greek yogurt and seasonings (salt, pepper, nutmeg, oregano). Mix everything thoroughly until smooth.
- Pour the egg-and-yogurt mixture over the vegetables in the dish.
- Crumble the feta cheese evenly over the top of the casserole.
- Bake in an oven preheated to 180°C for about 50 minutes, until the mixture sets and the sweet potatoes are tender (check with a fork).
