Ingredients
- 300 g Green asparagus
- 10 ml Olive oil
- 100 g Butter
- 54 g Egg yolks
- 10 ml Lemon juice
- 240 g Eggs (size L)
- 40 g Wheat flour
- 30 g Egg white
- 70 g Cornflakes
- 250 ml Canola oil
- 5 g Everything Bagel Seasoning
- 5 g Salt
Preparation
- Boil the eggs until soft (5 and a half minutes in boiling water), then transfer them to ice-cold water to cool them down. Carefully peel them.
- Prepare the hollandaise sauce: melt the butter. In a bowl set over a double boiler, whisk the egg yolks with lemon juice and a pinch of salt until the mixture thickens. Slowly pour in the melted butter, stirring constantly, until the sauce becomes creamy.
- Wash the asparagus, trim off the woody ends, and sauté them in a skillet with a little olive oil until they're crisp but still firm.
- Coat the hard-boiled eggs, one by one, in flour, beaten egg white, and crushed cornflakes mixed with salt. Deep-fry them until golden brown.
