  1. Grate the zucchini and carrots using a coarse grater. Sprinkle with salt, stir, and let sit for 20 minutes to allow them to release their liquid.
  2. After 20 minutes, thoroughly squeeze the excess water out of the vegetables using a clean kitchen towel or cheesecloth.
  3. Add the egg, grated cheese, Provençal herbs, and pepper to the drained vegetables. Mix everything thoroughly.
  4. On a baking sheet lined with parchment paper, shape the mixture into 5 taco-shaped patties.
