Ingredients
- 800 g Baby potatoes
- 400 g Ground beef
- 30 g Taco seasoning
- 150 g Cheddar cheese
- 30 ml Olive oil
- 100 g Sour cream
- 20 g Green onions
Preparation
- Preheat your oven to 200°C (400°F). Boil the baby potatoes in salted water until tender, about 15-20 minutes.
- Drain the potatoes and place them on a baking sheet. Use the bottom of a glass or a potato masher to gently smash each potato until flattened but still holding together.
- Drizzle the smashed potatoes with olive oil and season with salt and pepper. Bake for 20-25 minutes until crispy and golden brown.
- While potatoes are baking, brown the ground beef in a skillet over medium heat. Drain excess fat, add the taco seasoning and a splash of water, and simmer until thickened.
- Remove the potatoes from the oven, top with the taco-spiced beef and shredded cheddar cheese. Return to the oven for 5 minutes or until the cheese is melted and bubbly.
- Remove from the oven and garnish with dollops of sour cream and chopped green onions before serving.
