Ingredients
- 400 g 5% fat minced beef
- 80 g Light Red Leicester cheese slices
- 160 g Small white tortillas
- 100 g Romaine lettuce
- 30 g Mayonnaise
- 15 g Ketchup
- 15 g Diced pickles
- 15 ml Pickle juice
- 5 g Mustard
- 3 g Smoked paprika
- 3 g Garlic powder
Preparation
- In a small bowl, mix together the mayonnaise, ketchup, diced pickles, pickle juice, mustard, smoked paprika, and garlic powder. Set the sauce aside.
- Chop the Romaine lettuce and place it in a mixing bowl. Add 1 tablespoon of the prepared sauce to the lettuce and toss to coat.
- Divide the minced beef into 4 equal balls (100g each). Place one ball onto the center of each tortilla and press down firmly with your fingers to smash it into a thin layer covering the tortilla surface.
- Heat a frying pan over medium heat with a light spray of oil. Place the tortillas beef-side down into the pan. Season the exposed tortilla side with salt and pepper. Fry for 3-4 minutes until the beef is fully cooked.
- Flip the tortillas over. Place a slice of cheese on top of the cooked beef. Cover the pan with a lid for 1-2 minutes to allow the cheese to melt and the tortilla bottom to crisp up.
- Remove from the pan, top with the dressed lettuce and a spoonful of the remaining Big Mac sauce, then fold to serve.
