Ingredients

Preparation

  1. Cook the rice according to the package directions. Drain and let it cool.
  2. Heat the olive oil in a skillet over medium heat. Add the cooked rice, 1 tablespoon of soy sauce, and hot peppers.
  3. Stir the rice, press it down into the pan, and fry for 3–4 minutes, until it’s golden brown. Stir and repeat the process until all the rice is crispy and golden. Set aside to cool.
  4. Prepare the dressing: Mix together plain yogurt, mayonnaise, Sriracha sauce, 1 tablespoon of soy sauce, and honey. Stir until smooth.
  5. Cut the lettuce into smaller pieces. Use a mandoline to slice the cucumber, radish, and onion into very thin slices (or chop them finely with a knife).
  6. Dice the avocado. Drain the tuna from the brine or oil.
  7. Put the lettuce in a large bowl, then add the cucumber, radishes, onion, avocado, and tuna.
  8. Pour the mayo-chili dressing over the salad and toss all the ingredients together.
  9. Sprinkle the salad with crispy rice just before serving. Serve immediately so the rice stays crispy.
