- 300 g Hard-boiled eggs
- 500 g Broccoli
- 200 g Radish
- 100 g Red onion
- 150 g Canned corn
- 150 g Avocado
- 30 g Chives
- 30 g Vegan Mayonnaise
- 40 g Plain Skyr
- 20 g Mustard
- 5 g Garlic
Preparation
- Cook the broccoli al dente in salted water, then cut it into smaller florets.
- Hard-boil the eggs, peel them, and dice them.
- Slice the radish, finely dice the onion, dice the avocado, and chop the chives.
- Place all the chopped ingredients and the corn in a large bowl.
- In a separate bowl, prepare the dressing: mix together the mayonnaise, skyr, mustard, pressed garlic, and salt and pepper.
- Pour the prepared dressing over the salad and toss thoroughly before serving.
