Ingredients

Preparation

  1. Add butter, diced onion, and diced carrot to a pan over medium heat and sauté for a couple of minutes until softened.
  2. Once softened, stir through minced garlic and grated ginger and fry for a few more minutes until fragrant.
  3. Add the miso paste and fry for a further minute or so. (Frying the miso in butter adds a slightly nutty taste).
  4. Pour in the stock or boiling water alongside the curry cubes and stir until the cubes are completely dissolved.
  5. Gently boil the sauce for a few minutes to allow it to thicken to your desired consistency.
  6. While the sauce is simmering, cook the udon noodles according to package instructions. Also, prepare the katsu prawns as per their package instructions.
  7. Boil an egg for 6 minutes, then immediately transfer it to an ice bath to stop the cooking process and make it easier to peel.
  8. Drain the cooked udon noodles and divide them between two serving bowls. Pour the hot curry sauce over the udon, ensuring the noodles are well coated.
  9. Top each bowl with the prepared katsu prawns, the halved 6-minute egg, chopped spring onion, a sprinkle of sesame seeds, and a dash of shichimi togarashi. Serve immediately and enjoy!
