Ingredients

Preparation

  1. Preheat the oven to 180°C. Wash and rub a large sweet potato (about 400 g) with olive oil (about 20 ml), then season with salt and pepper. Place it on a baking sheet lined with parchment paper.
  2. Bake the sweet potato in a preheated oven for 40 minutes, until it's soft inside. While it's baking, prepare the rest of the ingredients.
  3. Heat a little olive oil (from the remaining amount) in a skillet. Add 300 g of ground beef, and season with salt, pepper (3 g each), sweet paprika, and granulated garlic (5 g each). Cook over medium heat for 10–12 minutes, until the meat is well browned and crispy, stirring occasionally.
  4. Prepare the sauce: In a bowl, mix 200 g of skyr or plain yogurt with the juice of half a lemon (about 20 ml), chopped parsley (20 g), and a pinch of salt and pepper.
  5. Cut the baked sweet potato in half and scoop out some of the flesh to make room. Fill it with the fried beef.
  6. Add the sliced avocado (200 g). Pour the yogurt sauce over it and sprinkle with additional parsley. Serve immediately.
