Ingredients
- 500 g turkey broth portion
- 500 g duck broth portion
- 300 g carrot
- 200 g celeriac
- 150 g pore
- 300 g onion
- 150 g parsley root
- 2 łyżka olive oil
- 2 łyżeczka salt
- 3 szt bay leaf
- 5 szt allspice
- 100 g spelt flour
- 1 szt egg
- 1 łyżeczka salt for the pasta
- 50 g parsley
- 4 l water
Preparation
- Prepare the ingredients: wash the turkey and duck broth portions, peel the carrots, parsley root and celery (leave the leek and onion with the skin). Cut the vegetables into larger pieces.
- In a bowl, mix the meat and vegetables with 2 tablespoons of olive oil and 2 teaspoons of salt.
- Spread out on a baking sheet and bake in a preheated oven at 200°C for 20 minutes to make the vegetables and meat aromatic.
- Transfer the roasted ingredients to a large pot, pour 4 liters of cold water so that the water reaches above the level of the ingredients.
- Add 3 bay leaves and 5 grains of allspice. Bring to a boil, then simmer on very low heat (only gentle bubbling) for a minimum of 4 hours (preferably 8-12 hours) for maximum collagen extraction.
- Meanwhile, prepare the pasta: in a bowl, mix 100 g of spelt flour, 1 egg and a pinch of salt. Knead the dough into a ball that comes away from your hands.
- Put the dough in the refrigerator for 1 hour. Then dust with flour, roll out thinly, cut into strips.
- In a large pot, bring salted water to a boil, throw in the pasta and cook for 5 minutes (check the thickness so it is not overcooked). Drain.
- After cooking the broth, drain the broth from the bones and vegetables. Cut the cooked vegetables and meat into cubes.
- Arrange cooked noodles, chopped vegetables and meat on plates, pour drained hot broth over them. Sprinkle with chopped parsley.
- Store the surplus in the refrigerator: broth in a jar, the rest in a container, up to 3 days.
