- 150 g yam
- 1 łyżeczka oil
- 1 szt garlic
- 1 szt fresh chilli
- 120 g ground beef 10% fat
- 1 łyżeczka gochujang
- 1 łyżka soy sauce
- 0.5 łyżeczka sesame oil
- 0.5 łyżeczka honey
- 1 łyżka sesame
- 2 łyżka tomato and onion salsa
- 0.5 szt avocado
- 1 łyżka gritty cheese
- 200 g high-protein cheese
- 1 łyżka pickled jalapeño
- 1 szt fresh coriander
- 1 szt garlic
- 1 szt lime
- 1 łyżeczka salt
- 1 łyżeczka black pepper
Preparation
- Prepare protein sauce (for 6 servings): put 200 g of high-protein cheese, 1 tablespoon of pickled jalapeño, a large handful of cilantro, 1 garlic clove, juice of 1 lime, a pinch of salt and pepper in a blender. Blend to a smooth paste. Set aside in the refrigerator.
- Preheat the oven to 250°C. Peel and cut the yam (150 g) into small cubes. Mix with 1 teaspoon of olive oil, 1 clove of garlic squeezed and 1 chili chopped.
- Spread the yam on a baking sheet lined with baking paper and bake for 15 minutes, until soft and slightly caramelized.
- Prepare a glaze for the beef: in a bowl, mix 1 teaspoon of gochujang, 1 tablespoon of soy sauce, ½ teaspoon of sesame oil and ½ teaspoon of honey.
- In a frying pan, heat a little olive oil over strong heat. Add 120 g of ground beef and fry for 5-7 minutes until crispy and well browned, breaking up the meat.
- Pour the glaze into the pan with the beef, add 1 tablespoon of sesame seeds. Simmer 2-3 minutes over medium heat, stirring, until the sauce thickens and the beef is glossy and sticky.
- Prepare the remaining ingredients: dice ½ avocado, prepare 2 tablespoons of tomato and onion salsa, 1 tablespoon of grain cheese.
- Arrange the bowl in layers: roasted yam on the bottom, then beef with glaze, salsa, avocado, grain cheese, top with about 1/6th of a serving of protein sauce (about 50 g). Sprinkle with additional sesame seeds if desired.
