Ingredients
- 500 g Type 0 wheat flour
- 400 ml Lukewarm water
- 7 g Dry yeast
- 15 g Salt
- 20 g Olive oil
- 400 g Tomato puree (passata)
- 10 g Garlic
- 5 g Dried oregano
- 10 g Fresh basil
- 200 g Cheese mix (cheddar and mozzarella)
- 150 g Mushrooms
- 100 g Salami
- 30 g Parmesan
Preparation
- In a bowl, mix the flour with the water, gradually adding the dry yeast. Once the ingredients are combined, add the salt and let the dough rest for 10 minutes.
- Add the olive oil and knead the dough again until it's smooth. Cover it and let it rise in a warm place for about 1.5 hours.
- In the meantime, prepare the sauce: mix the passata with pressed garlic, oregano, chopped basil, salt, and pepper.
- Divide the risen dough into 8 equal parts, shape them into balls, and let them rest for 15 minutes.
- Flatten each ball into a patty. Spread the sauce over half of each patty, then top with sliced mushrooms, salami, and a cheese blend.
- Fold the dough in half to form a dumpling, and seal the edges tightly so the filling doesn't leak out.
- Bake in an oven preheated to 200°C for about 20 minutes, until golden brown.
- After removing them from the oven, sprinkle the finished mini calzone with Parmesan cheese.
