  1. Preheat your oven to 180°C. Place the whole sweet potato (skin on) on a baking tray and bake for about 60 minutes, or until it is completely soft inside.
  2. While the potato is baking, place the cherry tomatoes and garlic cloves in a small baking dish. Drizzle with olive oil, season with salt and pepper, and roast in the oven until the tomatoes are softened and juicy.
  3. Poach the egg in simmering water until the white is set but the yolk is still runny.
