  1. Preheat the oven to 200°C. In a large bowl, combine the chicken, egg, grated carrot, squeezed zucchini, onion, 3 cloves of garlic, parsley, and spices (1 teaspoon paprika, 1.5 teaspoons thyme, salt, and pepper). Mix thoroughly with your hands.
  2. Shape the mixture into meatballs slightly larger than golf balls and place them on a baking sheet lined with parchment paper. Drizzle lightly with olive oil and bake for 20 minutes, until they are golden brown and cooked through.
  3. In the meantime, prepare the sauce: in a large skillet over medium heat, sauté the shallots with a pinch of salt for 3 minutes, until softened. Add the remaining garlic and spices (paprika, thyme, salt, chili flakes, pepper), and sauté for 1 minute.
  4. Add the tomato paste and sun-dried tomatoes, and sauté for 1–2 minutes. Pour in the white wine and cook until the liquid has almost completely evaporated.
  5. Add the butter, and once it has melted, stir in the flour to form a paste. Gradually pour in the milk, stirring constantly, until the sauce is smooth. Add the bouillon cube and simmer for a few minutes until the sauce thickens. Finally, stir in the Parmesan.
  6. Add the cooked meatballs to the sauce and cook them together for a few minutes to let the flavors blend. Add fresh basil and chives during the last 30 seconds.
