  1. Prepare the labneh: mix the Greek yogurt with salt. Place it on cheesecloth or a clean dish towel and let it sit in the refrigerator for a few hours or overnight to drain and thicken.
  2. Wash the carrots, pat them dry, and cut them lengthwise into halves or quarters, depending on their size.
  3. In a bowl, mix the chopped carrots with olive oil, honey, salt, pepper, and a pinch of chili.
  4. Preheat the oven to 200°C. Spread the carrots on a baking sheet lined with parchment paper and bake for about 20–30 minutes, until they are tender and lightly caramelized.
