Storage and reheating

Ingredients
- 400 g Caramel Low Fat Yoghurt
- 100 g Eggs
- 15 g Cornstarch
- 80 g Zero Calorie Sweetener
- 5 g Vanilla Extract
- 150 g Light Cream Cheese
- 60 g Biscoff Spread
- 100 ml Low Fat Milk
- 20 g Mini Biscoff Biscuits
Preparation
- In a blender, combine the flavoured low-fat yoghurt, eggs, cornstarch, zero-calorie sweetener, and vanilla extract. Blend until the mixture is smooth and creamy.
- Pour the mixture into a lightly greased and lined cake baking dish.
- Wrap the outside of the baking dish with aluminium foil to prevent water seepage.
- Place the baking dish into a large tray and fill the tray approximately halfway with water to create a water bath (bain-marie).
- Bake in the oven at 165°C for approximately 45 minutes. Once cooked, remove from the oven and set aside until completely cool.
- While the cheesecake cools, prepare the sauce: in a bowl, combine 30g of Biscoff spread with the milk. Microwave for 20-30 seconds, then stir in the remaining 30g of Biscoff spread until thick.
- Pour the sauce evenly over the top of the cooled cheesecake. Crush the mini Biscoff biscuits and sprinkle them around the edges.
- Place the cheesecake in the fridge to set, then cut into 4 slices and serve.
