- 200 g Sushi rice
- 300 ml Water
- 60 ml Rice vinegar
- 15 g Sugar
- 1 g Salt
- 2 szt Nori sheets
- 150 g Fresh salmon
- 50 g Cream cheese
- 50 g Cucumber
- 50 g Pickled gourd (kanpyo)
Preparation
- Rinse the sushi rice thoroughly in cold water until the water runs clear. Then cook it in water (ratio 1:1.25) over low heat, covered, for 10–15 minutes.
- In the meantime, prepare the marinade: mix the rice vinegar with the sugar and salt until they dissolve.
- Transfer the cooked rice to a bowl, pour the sauce over it, gently stir with a spatula, and let it cool.
- Prepare the rolling mat by wrapping it in plastic wrap. Place the nori sheet on the mat (rough side up).
- Spread the rice evenly on the nori, leaving a narrow strip (about 1–2 cm) free along the top edge.
- Arrange strips of salmon, cream cheese, cucumber, and squash in the center of the rice.
- Moisten the open edge of the nori with water and roll it up tightly using the mat.
- Use a sharp knife to cut the rolled dish into 6–8 even pieces. Serve with wasabi and soy sauce.
