- 800 g sweet potatoes
- 400 g canned tomatoes
- 400 g ground turkey
- 200 g onion
- 124 g light mozzarella
- 80 g plain yogurt
- 40 g olive oil
- 4 szt garlic cloves
- 20 g fresh herbs
Preparation
- Preheat the oven to 180°C. Wash the sweet potatoes, prick them in several places with a fork, drizzle with half the olive oil (20 g), and season with salt and pepper.
- Bake the sweet potatoes in the oven for 50 minutes, until they're soft.
- Meanwhile, peel and finely dice the onion, and press 4 cloves of garlic through a garlic press.
- Heat the remaining olive oil (20 g) in a skillet, add the onion and garlic, and sauté over medium heat for 2–3 minutes, until the onion is soft.
- Add the ground turkey, salt, pepper, sweet paprika, oregano, granulated garlic, and turmeric to taste. Sauté, stirring, for 5–7 minutes, until the meat is browned.
- Add the canned tomatoes, stir, and simmer over low heat for 5–7 minutes, until the sauce thickens.
- Cut the baked sweet potatoes lengthwise along the top, and gently press the sides to form a pocket without damaging the skin.
- Fill each sweet potato pocket with the meat filling.
- Sprinkle with grated or crumbled low-fat mozzarella and add one tablespoon of plain yogurt to each sweet potato.
- Sprinkle with fresh herbs. If desired, bake for another 2–3 minutes in the oven to melt the cheese. Serve hot.
