- 200 g Wheat flour
- 160 g Plain yogurt
- 10 g Curry seasoning
- 10 g Olive oil
- 1 g Salt
- 2 g Baking powder
- 2 g Baking soda
- 50 g Shallot
- 15 g Garlic
- 20 g Tomato paste
- 160 g Cooked chickpeas
- 90 g Canned corn
- 150 g Mushrooms
- 200 g Peeled tomatoes
- 1 g Provençal herbs
- 1 g Cinnamon
- 30 g Parsley
- 50 g Brie cheese
- 30 g Parmesan
Preparation
- In a bowl, mix together the dry ingredients for the dough, then add the yogurt and olive oil. Knead the mixture for about 5 minutes, until a soft, moist dough forms.
- In a skillet, sauté the chopped shallots and garlic for 1–2 minutes. Add the chickpeas and tomato paste, cook for another 3 minutes, and then gently mash the chickpeas with a fork.
- Add the peeled tomatoes, corn, spices, and mushrooms (which you’ve previously sautéed in a separate pan) to the filling. Finally, stir in the chopped parsley and set aside to cool.
- Divide the dough into 6 equal parts. Gently roll each part out into a flat circle, place a slice of Brie on the bottom, top with 2 tablespoons of filling, and sprinkle with a little Parmesan.
- Pinch the edges of the dough together to form rolls. Place them on squares of parchment paper.
- Brush the rolls with olive oil and steam them, covered, over low heat for 15–18 minutes, until they are soft and have risen.
