Ingredients

Preparation

  1. In hot oil, sauté the finely chopped onion, ginger, and garlic for a few minutes, until they soften and begin to release a strong aroma.
  2. Add the gochujang paste, soy sauce, fish sauce, peanut butter, coconut milk, and broth. Simmer everything for 5–10 minutes.
  3. Blend the prepared broth with a hand blender until it's smooth and creamy.
  4. In a separate skillet, sauté the ground meat with half a teaspoon of gochujang paste, two teaspoons of soy sauce, salt, and pepper until browned.
  5. Cook the udon noodles according to the package directions and prepare the eggs so they are soft-boiled (by boiling them for about 6–7 minutes).
  6. Place the noodles in bowls, pour hot broth over them, and add the sautéed meat, egg halves, chopped chives, and sesame seeds. Finally, drizzle chili oil over the dish.
