- 500 g Type 0 flour
- 400 ml Summer water
- 7 g Dry yeast
- 15 g Salt
- 20 g Olive oil
- 400 g Tomato Passata
- 5 g Dried basil
- 5 g Granulated garlic
- 500 g Mozzarella Tart
Preparation
- In a bowl, mix the flour with the water, gradually adding the dry yeast. Stir until the ingredients are combined.
- Add salt and let the dough rest for 10 minutes. Then pour in the olive oil and knead the dough until it is smooth and elastic.
- Cover the dough with a cloth and let it rise in a warm place for about 3 hours.
- Divide the risen dough into 10 equal parts and shape them into balls. Let them rest for another 15 minutes.
- In the meantime, prepare the sauce: mix the tomato passata with dried basil and garlic.
- Stretch or flatten each ball of dough into a small disc. Spread the prepared tomato sauce on top.
- Bake in an oven preheated to 200°C for 10 minutes.
- Remove the mini pizzas from the oven, sprinkle them generously with grated mozzarella, and bake for another 5–6 minutes, until the cheese melts and turns slightly golden.
