- 300 g flour tortillas
- 10 g plain flour
- 45 ml water
- 500 g chicken mince
- 30 g taco seasoning
- 20 g tomato paste
- 100 ml chicken stock
- 150 g red capsicum
- 60 g mozzarella cheese
- 5 g fresh coriander
Preparation
- Preheat your oven to 180°C.
- In a small bowl, mix the plain flour and water until smooth to create a sealing paste.
- Make 4 small cuts around the edge of each tortilla. Brush the edges lightly with the flour paste, then fold and press the tortillas into muffin tin cups or small ramekins to secure the shape.
