Ingredients
- 200 g boneless chicken thighs
- 200 g Chinese noodles (e.g., wheat noodles)
- 75 ml dark soy sauce
- 15 ml sesame oil
- 15 g sugar
- 10 g potato starch
- 60 ml water
- 30 ml vegetable oil
- 100 g carrot
- 100 g onion
- 100 g cabbage
- 10 g garlic
- 10 g ginger
Preparation
- Prepare the sauce: In a small bowl, mix together the soy sauce, sesame oil, sugar, a pinch of salt, pepper, potato starch, and water. Set aside.
- Dice the chicken, mix it with 2 tablespoons of soy sauce, a pinch of salt, and a teaspoon of potato starch. Let it sit for a moment.
- In a very hot skillet or wok, sauté the vegetables (carrots, onions, cabbage) briefly—cook over high heat for no more than 2 minutes so they remain crisp. Remove from the pan.
- Add a little oil to the same skillet and fry the chicken until golden brown.
- Add the minced garlic and ginger, and sauté for a moment (optionally, add a splash of white wine).
- Add the pre-fried vegetables, cooked pasta, and prepared sauce to the chicken. Stir everything vigorously over high heat for about a minute, until the sauce thickens and coats the ingredients.
