  1. Place the carrots in a saucepan and cover with just enough salted water. Boil until fork-tender, then drain and immediately mash or blend until smooth while still hot.
  2. While the mashed carrot is still warm, gradually mix in 200g of the glutinous rice flour until a dough forms. Add more flour as needed until the dough is smooth and no longer sticky. If the dough is too crumbly, add a small amount of hot water to bring it together.
  3. Pinch off small pieces of dough, roll into balls, then press your finger into the centre of each to create a little button shape.
  4. Cook the button noodles in boiling water for about 3 minutes, or until 30 seconds after they float to the surface.
  5. Divide the cooked noodles into two bowls. Top with minced garlic, sliced spring onions, and chili flakes. Heat the oil until shimmering and pour it over the aromatics. Stir in the soy sauce and vinegar, toss everything together, and serve immediately.
