- 45 ml Sweet chili sauce
- 15 ml Rice vinegar
- 60 g Ketchup
- 80 g Honey
- 20 g Gochujang paste
- 5 g Potato starch
- 200 ml Cooking oil
- 200 g Garnishes (lettuce, mango, cucumber, chives, sesame seeds)
Preparation
- In a bowl, mix together the flour, warm water, yeast, sugar, and salt. Knead the dough until smooth, then set it aside in a warm place to rise for about 40 minutes.
- In the meantime, prepare the sauce: in a skillet, combine the sesame oil, minced garlic, soy sauce, sweet chili sauce, rice vinegar, ketchup, honey, and gochujang paste. Bring to a boil. Add potato starch mixed with a little water to thicken the sauce. Finally, add a pinch of white sesame seeds.
- Knead the risen bun dough again, divide it into 7 portions, shape them into buns, and let them rest for another 10–15 minutes. Then steam them in a steamer for 10–12 minutes.
- Prepare the tempura batter: mix the flour, egg, and cold water until smooth. Coat the chicken pieces in the tempura batter and deep-fry until golden brown.
- Mix the fried chicken with the prepared sauce.
- Cut the bao buns in half, then fill them with lettuce, cucumber slices, mango, and chicken in sauce. Sprinkle with chives and sesame seeds.
