  1. Combine 185g blueberries, lemon zest, lemon juice, honey, and a pinch of salt in a small saucepan. Bring to a boil, then reduce heat and simmer until thickened, stirring occasionally.
  2. Butter both sides of the sourdough bread slices.
  3. Spread a layer of the blueberry compote on the inside of both bread slices.
  4. Layer the Brie cheese on both slices, then press in the fresh blueberries and basil leaves. Drizzle with a little hot honey and balsamic glaze, and sprinkle with flaky sea salt.
  5. Close the sandwich and cook in a pan over medium heat for 2-3 minutes per side until golden brown.

  7. Drizzle with additional hot honey and a pinch of flaky sea salt before serving.
