Ingredients

Preparation

  1. Preheat your air fryer to 180°C. Toss the cubed sweet potatoes with a little oil, garlic powder, and 1 tsp of chilli flakes. Cook for 25 minutes until tender and slightly crispy.
  2. While the potatoes cook, heat a pan with a little oil over medium heat. Add the chopped onions and peppers and cook for 10 minutes until soft.
  3. Coat the rump steaks in 3/4 of the BBQ fajita seasoning, rubbing it in well. Fry in a hot, oiled pan for 4-5 minutes, turning regularly. Remove from the pan and let rest for 5-10 minutes before chopping into bite-sized chunks.
  4. Add the remaining seasoning to the onions and peppers in the pan and cook for another 5 minutes.
  5. Assemble the bowls by dividing the sweet potatoes, steak, and veggie mix. Top with smashed avocado (guacamole), a dollop of light cottage cheese, and a drizzle of hot honey. Garnish with extra chilli flakes and fresh parsley.
