  1. Prepare all the ingredients. Finely chop or blend the spinach. Lightly beat the egg for the batter.
  2. In a large bowl, combine the spelt flour, baking powder, and a pinch of salt. Mix the dry ingredients together.
  3. Mix the cottage cheese with the egg and chopped spinach until smooth. Pour the wet ingredients into the bowl with the dry ingredients.
  4. Mix with a spoon, then knead briefly by hand, just until the ingredients are combined. The dough will be soft and slightly sticky—that’s how it’s supposed to be. Don’t knead it for too long.
  5. Divide the dough into 4 equal parts. Shape each part into a roll about 20 cm long, then pinch the ends together to form a bagel shape.
  6. Place the bagels on a baking sheet lined with parchment paper, leaving space between them.
  7. Beat the second egg and brush it over the top of each bagel. Sprinkle with seeds of your choice (sesame, poppy, sunflower).
  8. Bake in a preheated oven at 180°C (top and bottom heat) for 20–25 minutes, until the bagels are lightly golden.
