Ingredients
- 450 g Light Halloumi
- 150 g Bacon medallions
- 75 g White onion
- 30 ml Vinegar
- 5 g Sugar
- 75 g Cucumber
- 40 g Lighter than light mayo
- 25 ml Reduced sugar sweet chilli sauce
- 40 g Panko breadcrumbs
- 80 g Honey
- 1 g Chilli flakes
- 240 g Burger buns
Preparation
- Slice the cucumber and remove the seeds, sprinkle with salt and set aside.
- Pickle the sliced onions in vinegar and sugar.
- Slice the halloumi in half and soak in boiling water for 15 minutes.
- Air fry the bacon at 195°C for 10 minutes, then finely dice or process and mix with Panko breadcrumbs.
- Mix mayo and sweet chilli sauce together; set half aside.
- Remove halloumi from water, pat dry, and gently roll out to flatten slightly.
- Brush halloumi with some of the mayo mixture, dip in the bacon/Panko crumb, and air fry at 200°C for 8 minutes. Add the buns to the air fryer for the final minute.
- Mix honey and chilli flakes together and warm in the microwave for 30 seconds.
- Drain the onions and cucumber, mix with the remaining mayonnaise, place on the bottom of the buns, top with halloumi, drizzle with hot honey, and add any remaining mayo to the top bun.
