Ingredients
- 300 g chicken breast
- 15 ml olive oil
- 3 g salt
- 1 g black pepper
- 3 g garlic powder
- 2 g paprika
- 60 g all-purpose flour
- 100 g eggs
- 100 g panko breadcrumbs
- 2 g dried parsley
- 400 ml vegetable oil
- 110 g mayonnaise
- 45 g Parmesan cheese
- 5 ml lemon juice
- 5 g Dijon mustard
- 5 g Worcestershire sauce
- 3 g garlic
- 320 g burger buns
- 120 g romaine lettuce
- 28 g butter
Preparation
- Mix the 15 ml olive oil with the salt, black pepper, garlic powder and paprika in a small bowl. Pat the chicken breasts dry, slice them horizontally in half to make 4 thin cutlets, then rub the seasoning all over the chicken. Let it sit while you set up the breading.
- Set up three shallow dishes: seasoned flour in the first, beaten eggs in the second, and panko tossed with 1 tsp of the dried parsley in the third. Season the flour with a pinch of salt, pepper, garlic powder and paprika.
- Dredge each cutlet in the flour, shaking off the excess, dip it into the egg so it is fully coated, then press it firmly into the panko mixture on both sides.
- Pour the vegetable oil into a deep skillet to a depth of about 2 cm and heat to 175°C (350°F). Fry the cutlets in batches for 3–4 minutes per side until deep golden and crisp, and the internal temperature reaches 74°C (165°F). Drain on a wire rack, not paper, so they stay crunchy.
- While the chicken fries, whisk the mayonnaise, most of the grated Parmesan (reserve a little for topping), lemon juice, Dijon mustard, Worcestershire sauce, grated garlic and a good grind of black pepper until smooth and creamy. Add 15–30 ml water a splash at a time if the dressing is too thick.
- Spoon about 3 tbsp of the dressing into a small bowl and set it aside for the buns. Toss the chopped romaine with the remaining dressing and a pinch of the Parmesan.
- Stir the remaining 1/2 tsp dried parsley into the melted butter. Brush the cut sides of the top buns with the parsley butter.
- Lightly toast the buns in a dry pan or under the broiler for 1–2 minutes until golden at the edges.
- Spread the reserved dressing on the bottom buns, then layer on the crispy chicken, a generous pile of Caesar-dressed romaine and extra grated Parmesan.
- Close with the buttered top buns, press gently, and serve immediately while the chicken is still hot and crunchy.
